Homegrown Minced Garlic
A great recipe to mince and save some of your home grown garlic Always utilize sterile canning equipment and safe canning procedures.
  1. Bring a medium pot of water to boil
  2. Add garlic and citric acid to food processor and mince well.
  3. Remove the garlic mixture from the processor to a bowl
  4. Add the olive oil, and sea salt to the garlic and mix well
  5. Slowly add 1 cup of boiling water and stir.
  6. Slowly pour the minced garlic into your clean & sterilized jars leaving ½” headspace
  7. Pack well and remove any air bubbles
  8. Wipe clean and add your lid and ring
  9. Carefully place your jars into your pressure canner
  10. Process at 10lbs of pressure for approximately 45 mins or so
  11. Remove from heat and wait until your pressure canner is safe to open
  12. Remove your jars and place them on a drying rack or dish towel
  13. Let cool and check to see if your lids have “popped”
  14. Use and consume unsealed minced garlic
  15. Those that did “pop” are now safe to store, remember to remove the ring.
